So for those of you who will be celebrating Thanksgiving this week...what goodies are "must haves" at your gathering?

For me:

Turkey
stuffing / dressing
mashed potatoes
cranberry sauce (which I make, tyvm; none of that canned stuff on Turkey Day)
Two types of pie: pumpkin and mincemeat

My only "absolute must have" dishes are the turkey with 'made from scratch' mashed potatoes and gravy

A lot of people will disagree but roasted brussel sprouts are a must have on my menu. We had those along with asparagus, spaghetti squash, beets and roasted yams this year.
I'll take the first three, but you can keep the beets (which I do like sometimes) and the roasted yams (which I never like).

While we're on the topic of Thanksgiving. I'd love to know everyone's turkey cooking techniques. I've done it a few ways, including brining (which is a pain in the arse for little return imho). I've always wanted to try deep frying a turkey but that seems like a pain and potentially really dangerous.
Turkey prep is simply rubbing it with olive oil. Then my husband will put it in the smoker, with lots of mesquite chips, somewhere between 10:00 pm and midnight Wed night. He'll stay up all night, dozing off and on, so that he can check the temp and add mesquite chips every couple of hours. Turkey will come off of the smokers around 3:00-4:00 pm Thr.

I've often wondered about deep fried, but I don't really eat fried foods anymore.

I've never tried smoking, although I've bought custom smoked turkeys before at this Eastern European meat place that was quite good. I think the one advantage of doing a smoked or deep fried bird is that it frees up your oven space which there never seems to be enough space.

that sounds like the way i will spend my winter trying to keep warm.. ugh.. . but tending a wood stove, not a smoker. LOL

Ahhh..Thanksgiving! I traditionally share the holiday with friends, although this year my mom will be going with me...

One of the participants is the world's best cook, seriously! He's doing the turkey and stuffing and gravy this year, YUM! Other must haves are my cranberry compote, sweet and white potatoes, and pumpkin pie. This year I'll be trying a honey-glazed roasted yam with onion and apple recipe. Then we'll also have fruit salad, mashed potatoes, greens, green salad, rolls... and who knows what else. For sure it will be a fun day with friends, with too much food, a little too much wine, and never too much warmth and conviviality. I'm truly blessed with my friends... :)

I shall be celebrating Thanksgiving by having one day off from work, generously paid for by my employer. Whereupon I shall return to work on Friday. On my day off I shall spend my time alone contemplating which McDonald's or like might be open so I might partake of food. I will then, likely, end up not eating food and/or attempting to beg some food from a local asian establishment, Chinese or Thai.

Thank you! *smiles* I sooo loved doing it. Was always easy, since I constantly fly through and around things, but work got so busy I did not have enough time for the practices and fitting in with the other dancers.

I still try to see them each year they have a show though. The lights, the sounds, the wonderful movement through it all, simply fantastic!

sounds fun to me! i'll be crammed into a home full of dear friends, good food and a football game of rival teams. surely there will be a nap squeezed into the day. i mean, i'm famous for it at their house! LOL

I have been spending most Thanksgivings in Las Vegas the past 6 years or so, but since I wll be traveling for half of December through New Year's, Vegas will have to get along without me this year. If I were to cook, it would be turkey, sausage and apple stuffing stuffing, garlic mashed potatoes, green beans with garlic and black olives sauteed in olive oil, and apple pie.However, I've decided on a solitary Thanksgiving this year and will be dining out at a local eatery.
