FRESH beef is not very good. It has this wild twang to it. It must be ages a MINIMUM of 3 days. Also, there is no real difference between a dairy cow and any other feed stock cow. That cow that was standing in a stall giving milk last week may well be the hamburger you get next week. After all, a dairy will have to rotate it's stoke and old cows don't go to retirement homes.


Oh yea. It was fresh. Not sure if it actually died that day or a few days earlier.

OK..finally got around to looking at some pics from the trip across the pond.

Sad but true! A day or two after the election I'm in front of the TV flipping thru the major news networks. An actual news department would have had a story like "What will Obama do about, Iraq, energy, the economy, health care, education, etc."

But NOOOO!!!!! The big story of the day is about what kind of friggin dog he is going to buy. :o
Remember all those months when night after night the network news shows spent 20 minutes on O.J. and then ten minutes (minus commercials) on everything else that happened in the whole world?

3 days? 3 weeks you mean. Meat that is underhung is, ironically, drier when cooked. Because there is so much fluid in the fibres of the muscle, it expands when it is cooked and ruptures the muscle tissue. All the juices then escape leaving the meat tough and dry. Likewise, underhung meat doesn't freeze well. Have you ever defrosted some frozen meat and found bloody juices leaking out of it? That meat was underhung. If it is dried properly then it will be moister when cooked. My butcher hangs his beef for one calendar month. 3 days is what the supermarkets do, and it's just not good enough.

There certainly is a big difference between the character of meat from a dairy breed and a beef animal. Why do you think they cross breed dairy cattle and beef cattle when the dairy cow needs a calf to produce milk? If there was no difference, then they would just breed the cow with a dairy bull. It's so that the male calves that are produced can be put to some use as beef, rather than just being shot at birth like most purebreed male dairy calves would be (since we now have in irrational aversion to perfectly good veal).

Old dairy cows are made into pet food, by the way, and they do not skin veal calves alive - that's a myth created by the terrorist loonies at PETA.

No, just someone roleplaying a fantasy character for financial gain. I think it's really her use of internet phenomena in her songs that annoys me too. The internet is stupid, but atleast most people confine their internet stupidity to the internet.
