OK....this is the final weekend of the Baseball season, and there is a Pennant race to be decided, so I am not going anywhere this weekend. While watching the games I am going to do some power cooking, now that the weather is cooler. Tonight I am making a batch of my world famous Chicken Soup in my Official Tony Stewart NASCAR CrockPot:
![]() Brenda's Chicken Soup One whole chicken cut up. The size of the chicken is dependant on the size of the crockpot. Remove the breast meat, skinless, and set it aside in a sealed container. Cut up a couple of carrots, tops and all, celery stalks, again with the tops and an onion, peeled. They can be cut into large pieces as they will not be in the finished soup. Place the vegetables on the bottom of the pot, add the chicken on top and fill with water. Add some bayleaves, and whole peppercorns. Cook on low for 8-10 hours, 6-8 on high. After this, remove all the chicken and vegetables from the pot. If you wish to use the meat for another recipe, chicken salad or whatever, fine. But I only use white meat in the soup. Strain and defat the stock, so you have clear broth. Cut the breast meat into small pieces and place in the pot, and turn up to high. Chop up another batch of celery, carrots and onions into serving size pieces and lightly saute them in a neutral flavored oil, just until the onions start to turn clear, then add to the pot. Cook on High 2 hours. You can also add fresh bayleaves if you like. After the 2 hours adjust seasonings. Add salt to taste, some rosemary, thyme, marjoram, parsley and ground white pepper. Lemon juice can be used to cut down on salt if you like. Cook for another hour or two on high. Serve with rice or pasta of some sort, I like Goodman's wide egg noodles. _____________________

If you roast the chicken carcass in a hot oven before adding it to the soup it will caramelise the sugars in the meat and enhance the flavour. I also cut off the thighs and drumsticks for use in other dishes too - there is still plenty of meat on a chicken to make a good 6 or 7 portions of soup. _____________________

Yup I'm with Conan. If you're really lazy, buy one of those roasted chickens at the grocery, then use that. Very flavorful.
