Lots of great suggestions in here - Some I want to look into, too.
The Frank Lloyd Wright sim is really nice and they hope to offer classes there some day.
Try different places or types of roleplay. Not all roleplay sims are equal.
The Lions club is just starting in SL and they put a thread here wanting new members.
If you like roleplay try joining groups that put on plays, like the Birdcage Theater in Tombstone, or The Globe (Shakespeare.)
Myself I am ready to be mentored - I want to learn, I want to make, and so far I just sit in my private sandbox poking a stick in the sand.

I'm bored. What more is there to do in SL? What's something maybe slightly goal oriented or intellectually stimulating to do? I don't see 'exploring' on your list and that is one of the most amazing non-boring things about SL. Or maybe just take a break. You'll figure out soon enough whether you are drawn back and what you are drawn to.

From: Seven Okelli Scylla's post made me remember something - one of my best friends in RL is an Episcopal priest, and he took me to visit Epiphany Island, where there is lovely Anglican cathedral, and it's staffed like a brick-and-mortar church would be.
The specific example isn't important - my point is that there are religious and spiritual groups of every persuasion in SL, if that is your thing.
. That is the church I am (or was) a part of. It is a very lovely sim with lots to explore and a very open, caring community.

This was almost my first response but as the OP specifically mentioned "goal-oriented" and "intellectually stimulating" I decided to list some of my activities. (My former husband used to all me "an insightful dude."  ) But seriously, perhaps because I'm an only child, I am NEVER bored. I love to read and have enough books at home on my "to read" list that if I never signed onto SL for the next few months I'd still have TONS of things to do. I honestly don't understand the word "bored."

Bored isn't really a lack of things to do. There are always things to do.
Bored is more 'tired of things I have done.' It can range from mild ennui, to serious existential depression.

Find someone to chase, convince them to quickly get into a relationship because you are sure of your undying love, then talk them into an SL marriage, plan the wedding, have the wedding, ditch the partner -- that should kill another month or two for you.

I wanna learn ALL these tier 2 of SL, higher learning types of things.
I need a teacher(s) - I've actually asked about that for some months off and on. I even ran an ad in search once. (I got mostly newbies who didn't even follow the 'send a notecard not an IM' or 'tell me about your skills' part. I got mostly "Hi I want a job" IM.)
