Dinner will consist of Dirty Rice and jalapeno poppers. The poppers are the frozen kind- I don't know if Yosef has the time or inclination to come out here and cook for me in person. The dirty rice I'll make my self- with a little help from Zatarains... nope - I am not a cook.. :)



CAJUN DIRTY RICE

1 lb. ground pork
1 lb. ground beef
1 large bell pepper
1 medium onion
5-6 cloves garlic, peeled
1-2 fresh, cayenne peppers
1 tsp. salt
1 tsp. red pepper flakes
2 4-6oz cans mushroom steak sauce
3-4 cups cooked rice

The Dressing Mix:

Pan fry the ground meat well until all of the meat is well done. Put bell pepper, onion and garlic into food processor and "nearly" liquify it, then add this to the meat. The pepper/onion/garlic should sizzle as you stir it well into the the meat. When the sizzling fades, add the mushroom steak sauce and a little water and allow the entire dressing mix to simmer for at least a half hour.

Dirty Rice: Cooked rice can be added to this mixure and thoroughly stirred. The more rice you add, the drier and "whiter" the resulting dressing will be. Adding the right amount of rice will result in a dress that is moist with the rice appearing very brown ("dirty";).

Cornbread Dressing:

Substitute crumbed cornbread for cooked rice.

Save some for later: Freeze the dressing mix, i.e., before adding rice/cornbread, separately. When needed, defrost the mix by heating it and add the rice or cornbread.


DIRTY RICE

1-1/2 lbs. ground meat(beef or turkey)
4 bunches green onions, chopped
1 yellow or white onion, chopped
1 lb. pan sausage
1 mix Dirty Rice mix
Salt, pepper and garlic powder, to taste

Brown both meats in a dutch oven. Add onions. Cook until onions are clear. Add mix and 4 cups of water. Add a little salt, pepper and garlic powder. Cover. Cook until most or all of the liquid is gone. Good served with a salad and French bread.


CLASSIC DIRTY RICE

1/2 lb chicken gizzard
1 1/4 cups canned chicken broth
1 cup water
2 slices bacon
1 large green bell pepper, chopped
1 medium red bell pepper, chopped
1 medium onion, chopped (about 1 1/4 cups)
1 cup chopped scallion (green onions, about 5 medium)
2 medium carrot, chopped (about 1 cup)
1/4 cup chopped fresh parsley
2 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (ground red pepper)
1 cup raw rice
2 tablespoons butter
1/2 lb chicken liver
Directions

In a medium saucepan, bring the gizzards, chicken broth, and water to a boil. Reduce the heat to medium-low, cover, and simmer until the gizzards are tender, about 45 minutes. Reserving the broth, remove the gizzards, and when they are cool enough to handle, mince them and set them aside.

In a Dutch oven or flameproof casserole, cook the bacon over medium heat until crisp, about 10 minutes. Reserving the fat in the pan, drain the bacon on paper towels; crumble and set aside.

In the bacon fat, saute the gizzards over medium heat until browned, about 5 minutes.

Add the green and red bell peppers, the onion, scallions, carrots, parsley, garlic, salt, pepper, and cayenne. Cook over medium heat until vegetables have softened, about 5 minutes.

Add the rice and reserved broth. Increase the heat to medium-high and bring to a boil. Stir once, reduce heat to medium-low, cover, and simmer until the rice is tender, about 15 to 20 minutes.

Meanwhile, in a medium skillet, melt the butter over medium heat. Add the chicken livers and saute until firm, about 5 minutes. Let the livers cool slightly, then coarsely chop them. Toss the chicken livers and bacon with the rice. Cover and let sit for 10 minutes before serving.

Well a lot of King's books are pretty bad to begin with. But of his good books, like "The Green Mile" movies have turned out ok.

Remember that period in the 80's (if you are old enough) where there was a constant stream of Stephen King movies. Cat's Eye, Firestarter, etc etc.
Some real dogs came out during that time.

And The Stand is awesome. I have the DVD and watch it at least once a year.

The Gunslinger character is not a young guy. He doesn't look as old as he is but he has been after the man in black for a long long time and is quite world weary.

yes, for soem reason i pictured Clint Eastwood, when reading them, hence my hugh jackman choice unless he can talk Clint into doin it!
