Peanut oil is my preference too. My problem is the electric stovetop - blah. When I had a gas top, I never had a problem with it, very easy to adjust. The electric, is much more difficult to get tiny incremental changes to it - you really need to watch it like a hawk! Oh yeah...electric ranges are teh suck.  Back when I was Apartment dwelling, an electric range was a deal breaker for me. Their fine for small toaster ovens and such, I love my George Foreman 5 in 1 Rotisserie, but for a main oven. Never. *shakes fist*

It does have a MASSIVE deck, as large as the bedroom  Makes up for the stove somewhat and then some, especially once the Weber grill gets up there

From: Brenda Connolly Roux isn't that difficult to master. Just a little practice with getting the heat right as not to burn it. Then you just adjust it according to the color you want. I stated using EVOO because butter can burn easily, and actually prefer it that way now. I also use peanut oil sometimes if I want a really dark roux as peanut oil can take very high heat. Emeril makes it look like a breeze. And for the record, I have not, nor will I jump on the obvious wordplay around this topic. But Ohhh....you'll roux the day when I do! Absorouxtly!  Time to return to my the daily roux-tine. /me flees before a pot is hurled at him!
