It's a wonderful day in Sunny, balmy (ok...still freezing) Maine.

3Ring's little photo shoot was a total hoot last night. It was great seeing so many people gathered in one spot.

For once I agree with Pep. A kitchen table, empty except for a candle stuck in an empty bottle, a bottle of Wild Turkey 101 straight from the freezer, and a shot glass are the things needed to get over a busted relationship. A pack of unfiltered Camels is optional. Just hide your car keys someplace you won't be able to find them when drunk and unplug the phone (drunken calls to ex inlaws usually don't go over well).

Sorry! The omission was not intentional. Hmmm...not showing up in photos...have never seen your reflection in a mirror...what do you think this could mean?

LOL, I did have an amazing crawfish etouffe last week - was thinking of trying to cook one at home (roux not the easiest thing to get done correctly). I'm glad you reminded me, would have forgotten about it!

Roux isn't that difficult to master. Just a little practice with getting the heat right as not to burn it. Then you just adjust it according to the color you want. I stated using EVOO because butter can burn easily, and actually prefer it that way now. I also use peanut oil sometimes if I want a really dark roux as peanut oil can take very high heat.

Peanut oil is my preference too. My problem is the electric stovetop - blah. When I had a gas top, I never had a problem with it, very easy to adjust. The electric, is much more difficult to get tiny incremental changes to it - you really need to watch it like a hawk!
