Suet (like steak puddings etc) rolled flat, with bacon cuts on top, all rolled like a jam roly poly or swiss roll. Some people make it more of a pudding/pie thing, but i prefer the rolled version. Boil it in a cloth for a couple of hours and you have yourself a fabulous bacon pudding.

(sadly, I'm not a fan of bacon to begin with, but I'm certain this is a delicious recipe for those who like it)

So you take lard, roll it up with bacon and boil the whole mess in a cloth bag for a couple hours until it congeals into a pudding-like consistency? You don't eat that, do you? Please tell me you use it to start campfires or you load it with nuts and seeds and leave it for the birds in the winter.

Bacon Pudding recipe: "Ingredients 1 large onion 900g self raising flour 250g beef suet pinch of salt big pinch of dried sage water to make into a pastry 12 rashers of back bacon Method fry onion till light brown and cool mix flour, suet, salt and sage together with the water untill you get a pasty you can roll out cover with fried onions and then cover with the bacon and roll up like a swiss roll wrap in cling film and then in kichen foil loosely but sealed and steam for 1,1/2 hours unwrap and slice serve with mash and vegtables some like onion gravy but i like brown sauce and enjoy" So it's more like a bacon pie? Only boiled? Sounds repulsive...

You can buy it in little cakes and it gets them through cold winters. I'm not so sure about adding bacon to the mix. It's usually just lard and seeds. I honestly can't imagine eating that, and I LOVE bacon. I think Claire is pulling our leg.

I love that recipe. It includes bacon but then says you can use a vegetarian suet in place of beef suet. I detest bacon and am not a fan of beef, but if you're going to eat it why not just go for gusto.

I haven't read all of this thread, so I don't know if this has been mentioned or not, but posts can be, and usually are, displayed out of order after the system time has been changed. Perhaps someone tweaked the time on the server.

I can clear up some confusion. I think. When USAers hear the word "pudding" they think of something that UKers would call custard sauce or blanc mange or milk pudding. In the UK the word pudding can be synonymous with the word dessert or it can be specifically something more like a cake or a cobbler but cooked in a basin (bowl) in a pot of boiling water. It is cooked like this because the shortening is generally suet which is not the same as lard and which takes a long time to melt. A suet pudding can have fruit or meat filling. There is also sponge pudding which is like a sponge cake that is steamed instead of baked. Sweet steamed puddings are, by law, always served with custard sauce. The best kind is Christmas pudding which is so wonderful that it's only allowed on Christmas Day. Fortunately for me it's possible to make very good vegetarian Christmas pudding. It's a long time since I lived in England so this may be out of date...
