I had to go with the parm-reg. Not only can you get it in a handy shaker already grated to top spaghetti, but the fresh stuff tastes the best on top of a grilled steak salad or a caesar. Shame about the baby-barf smell though.

But a good Feta would kick its ass.

Agrees wholeheartedly.

I used to work at an Italian restaurant when I was a teen, and we would "make" our own Romano. We had full wheels of real Romano imported from Italy, which we would cut in chunks, and let dry. Then you keep repeating the process, unt the chunks are small enough to run them through a screen. That stuff blows away the table parmesan you see at many places.

I love Romano.....but really, I love anything cheesy. Or chocolaty. If I could eat just cheese and chocolate, I'd be a very happy girl. :)

Hard choice... Being from Rome, i could have voted for Pecorino Romano (try it with raw broad beans, traditional mid spring picnic roman food...).

At last, i had to go with Parmigiano-Reggiano. It's just perfect...

Vivianne, beer with cheese?? :eek: Red wine. Let's say a Merlot. Even if, with that Romano and broad beans, a white wine is better. Chilled. :D
