Wow, I have a pot of split pea soup simmering on the stove as I type this; in fact, my husband asked if I would make some this week, and luckily I had about 1 1/3 pounds pork roast left over, so I was all set.

Pea soup definitely needs onion, garlic, salt/pepper, and at least one of the following veggies: carrots, potatoes or celery. It is better with bacon, but not totally necessary. Pea soup also tastes good with crackers in it (I like saltines, but any crackers will do).

I have to say, however, that I prefer lentil and sausage soup to pea soup; I just like the flavor of lentils better than split peas.
