I just found out today that its my turn to cook Thankgiving Dinner this year. I have a huge family and every year someone is elected for the amazing challenge of feeding over 150 people.
Does anyone have any good recipe's that they wouldn't mind sharing? Help me!!! Huggerz, MJ ![]() _____________________

Hell, seems like someone long ago chose quantity over quality!

How is it uncalled for? i do not see how one person can cool for 150 people in there home kitchen and pay enough attention to the food to have it perfect.

if I had to serve 150 people I would run out right now and by all of the Swanson frozen Turkey dinners I oculd find. Then I would tell them to come in groups of 8 - and that would be the last time you would ever have to deal with it again!

This looks like a great recipe for cornbread dressing, it sounds just like my grandma makes. Might want to do a few of these though lol.
http://www.texascooking.com/recipes/dressinggiblets.htm Frying turkey is much faster than baking them also and will keep the oven free for cooking other stuff, so maybe consider renting a turkey fryer. Be carefull to put the turkey in the empty fryer and fill with water to the propper level that you will fry at then remove turkey and mark that as the oil fill level. So many people put oil in fryer, heat then drop turkey in there and soon realise they have to much oil as it spills all down the sides and causes a bad fire. http://www.eatturkey.com/consumer/cookinfo/fryturk.html Damn, now im hungry for dressing. |

150 people is insane. I would probably choose a highly polarizing subject as a "theme" for the dinner and hope that half of them didn't show up.
Potatos Salad - You can make it ahead of time and it'll keep. You can serve it cold as well. Make vats of it. It's filling. Collard Greens - These heat up great! Buy lots and boil them down. I like to use cayenne pepper, vinegar and smoked turkey necks. You can make up a huge "mess" of greens and stick em in the fridge. Just heat them up before. Salad - The best thing about salads is you can provide a pretty simple base and then offer LOTS of different dressings in decanters. People love it and it makes it look like you did a lot more work than you did. Use glass, go for color. Honey Baked Ham - They're cheap and everyone loves them. You can't go wrong with a Honey-Baked Ham...unless you're Jewish. Turkeys - I don't know about cooking turkeys. I always buy them pre-cooked. As long as you have a nice gravy, it'll be fabulous. Curry Yams - Whip up some yams. Toss in some onions and a little curry to keep them from being so sweet. This will keep in the fridge as well. Before you are ready to serve, pull them out reheat in the oven, then toss some little marshmallows on top, pop em back in and brown those on the top. Garnish with something green. I like cilantro. Don't forget color! Corn Soup - Find a decent recipe for a corn soup. It would be a nice large serving dish that satisfies the corn requirement but that won't leave behind 150 corn cobs. Lots of good recipes for corn soup. And that is Thanksgiving for 150! _____________________

Oh oh oh! Bread basket!
Go to the bakery and get tons of different kinds of rolls. Get a nice big basket. Dress it up with some dry herbs and decorate the basket with ribbon. Let people just pick whatever rolls they want. It will be a hit. _____________________

Of course you can always rely on smashed potatoes for a big filler.

Don't forget the small things. That's what makes the difference.
You want a couple of bottles of olive oil. Just use the bottles they come from the store. Open them up and stuff some herbs down in there. That same for the butter dish. Garnishing your condiments is a must. _____________________

This is just... crazy! I can't believe you are expected to feed that many people.
What I would do is, provide the basics: meat (turkey, ham, roast, whatever), gravy, mashed potatoes, green salad, stuffing (I like a bread, sausage and celery stuffing with poultry seasoning, butter and some canned or evaporated milk thrown in and baked until golden brown), beverages, and rolls (like Neehai said, go to a good bakery and buy those). Then, I would delegate. Get on the phone and call everyone on the invite list and ask them to bring at least one item falling into one of these categories: hor d'oeuvres/appetizers, extra salads and vegetables (green bean cassarole, candied yams or sweet potatoes, fruit salads, other cold salads, etc.), and dessert. It is just not fair that you be expected to feed 150 people all by yourself. If it's not possible to delegate at least some of the work, I'd call a caterer or a deli in the next day or so and order the main elements of the dinner such as the turkey/gravy/potatoes/stuffing/bread, so you'd only have to make the extras. I know that I'd go nuts if I had to do all that work on a holiday. |

LOL...it is very possible. My family has been doing this for years. Its like a big huge family reunion. However, I will drag a few of my cousins over to my house to help me cook **snickers**. Thank you all for the ideas.

stuffing (I like a bread, sausage and celery stuffing with poultry seasoning, butter and some canned or evaporated milk thrown in and baked until golden brown) Dressing that is not made with oysters is against God's plan. _____________________
