Myra's Garlic Pasta
1 package of Linguini 1 Package of Bacon 2 Eggs 1/2 bulb of garlic 1/4 cup grated parmesan cheese 1/4 cup grated romano cheese 1/2 cup cold pressed, extra virgin olive oil Seperate the eggs into white and yokes. Add the yokes to the olive oil and beat virgorously. Discard the egg whites. Press all of the garlic cloves in a garlic press into the oliveoil and egg yokes. Cook the bacon until it is extremely crispy, preferably over a grated pan so that the grease drips out, leaving only crispy, non-greasy bacon. Boil the linguini for 10-12 minues or to preferred texture. Strain and rinse linguini and place back into pot. Add Oliveoil/egg-yoke/garlic sauce to the linguini as soon as it's back in the pot. The egg yokes will cook on the heat of the 212+ degree F (100+ degree C) pasta that just finished boiling. Add grated cheese and crush the bacon, mix thoroughly. Salt to taste. The cheese and bacon might add quite a bit of salt depending on the sodium content you buy. I usually buy extremely low sodium everything so I can salt to my own prefference and not risk oversalting something by accidently adding salt when using a salted product (made that mistake when i was a kid when using salted nuts in a chocolate chip cookiee dough recipe that already called for salt... chocolate chip salt crisps is what they were). Best served when chilled. Do NOT reheat as that will cause the olive oil to seperate and thus spoil the pasta. Besides, it tastes much better out of the fridge than it ever does cold. _____________________
