What does the Char in Char Linden mean?

Char Linden posed this question as a challenge and offered some kind of reward at the Welcome Area the other day. I don't remember what the reward was, but who cares?

This is the sort of important question that everyone needs to focus on from time to time.

A good number of obvious choices like Charlene, Charlie, Charline, Charles, Charo, etc. were offered and rejected.

My guess is that Char is short for Charwoman, A woman hired for odd work or for single days.

I always thought Kerrigan in Starcraft was a reference to Nancy Kerrigan, the famous figure skater -- the (ice) queen of the (skate) blades.

Cha is the Mandarin word for tea so consequently people would say "a cup of cha" which later became "a cup of char" and basically means a very strong cup of tea.

Caffeine addict of the company, maybe? :)

Arctic Char with Savory Stuffing and Hollandaise

4 Arctic Char, about 2 inches (5 cm) thick (each 5 oz/150 g) 4
1 pkg frozen puff pastry, thawed 411 g

Dill Hollandaise sauce (recipe follows)

Savory Stuffing:

1 egg, beaten 1
1 tbsp milk 15 mL
1 tsp butter 5 mL
1/2 cup chopped onion 125 mL
4 green onions, chopped 4
1/2 cup chopped sweet green pepper 125 mL
1 clove garlic, minced 1
1/4 cup chopped fresh parsley 50 mL
1 tsp dried savory 5 mL
1/2 tsp salt 2 mL
1/4 tsp pepper 1 mL

With sharp knife, make horizontal slit almost but not all the way through each piece of fish. Open up like book.

Savory Stuffing:

In small bowl, beat egg with milk; set aside. In skillet, melt butter over medium heat; cook onion, green onions, green pepper and garlic, stirring often for 5 minutes or until softened. Transfer to food processor along with parsley, savory, 1 tbsp (15 mL) of the reserved egg mixture, salt and pepper; chop finely. Spoon over fish and fold together; set aside.

On floured surface, roll out each piece of pastry to 14 x 11 inch (35 x 28 cm) rectangle. Brush with some of the remaining egg mixture. Cut each in half lengthwise. Lay 1 piece of fish in centre of each piece of pastry. Bring long ends up to meet in centre; pinch together. Fold short ends over; press down. Transfer to greased baking sheet, seam side down. Brush with remaining egg mixture. Cut 3 slits in top.

Bake in 400° F (200° C) oven for about 40 minutes or until golden. Let stand for 5 minutes. To serve, pour Dill Hollandaise Sauce onto each of 4 warmed dinner plates. Slice each serving of fish in half; place on sauce. Serves four.

Dill Hollandaise Sauce:
1/2 cup unsalted butter 125 mL
3 egg yolks 3
4 tsp lemon juice 20 mL
2 tsp water 10 mL
1/4 cup chopped fresh dill 50 mL
1/2 tsp dry mustard 2 mL
1/4 tsp salt 1 mL
pinch cayenne pepper pinch

In small saucepan over medium heat, melt butter until bubbling but not browned. Microwave on High for 1 minute. Set aside. In heatproof bowl, whisk together egg yolks, lemon juice and water. Place over saucepan of simmering water, whisking constantly, until just beginning to thicken and lighten, about 3 minutes. * Whisk in butter in slow, steady stream until combined and thickened. Remove from heat. Whisk in dill, mustard, salt and cayenne. Makes 1 cup (250 ml ).

Tip: Although this classic sauce should be served as soon as it is made, it may be held for 10 to 15 minutes over warm water, then whisked before serving.
