I am wondering how can watermelon be declared a national fruit when it isn't even a fruit?? Actually, it is. "Vegetable" is not a technical term. It's a silly, imprecise word made up by cooks who never went to college, and refers to an edible part of a plant, whether it's actually a fruit, leaf or root. "Fruit", in the proper meaning of the word, is the plant kingdom's equivalent of an ovary. Scientifically speaking, a cucumber (a "vegetable" closely related to the watermelon) is also a fruit. You know the little bulb thingy that stays behind in a flower after the petals are dead or removed? That is also a fruit / ovary. Whether or not it's edible is irrelevant - it is still a fruit. Anything in a flowering plant (angiosperms) that produces and encases seeds is a fruit. Non-flowering plants (gymnosperms) produce seeds but not fruits. So the pinecone, for instance, is not technically considered a flower or fruit, even though it serves the same purpose. Fruit and Vegetable are common enough terms that we can acknowledge the differentiation in usage, though, indeed, the term vegetable is rather a farce.
However, the National Watermelon Promotion Board considers it a vegetable and that is good enough for me. http://watermelon.org/index.asp?a=dsp&htype=funn&pid=32 "Watermelon's official name is Citrullus lanatus of the botanical family Cucurbitaceae and it is a vegetable!
