Oaxaca -- best melting cheese ever. Just glare at it hard, and it melts. Like Velveeta, except it's real cheese ... and good, at that.

Brie -- omfg baked brie! If you don't love it, you are deranged.

Cheesecake -- almost really more like a pie, plus it's cheese! A marriage of almost-pie and cheese! How can you go wrong with that? :D
