can you unlink something that you bought that you have modifiy rights for? if so how do you do it? what about something you built and linked? can you unlink later?

To unlink, select the object and go Tools -> Unlink, or use the shortcut ctrl-shift-L. This will work on anything for which you have mod permission, whether you made the object or not.
If you want to unlink just some of the prims, but not all, turn on Edit Linked Parts in the editor window, select just the prims you want to affect, and then unlink. Every once in a while, the process gets bugged and the whole thing unlinks anyway, but 99.99% of the time, the unselected prims will stay linked while the selected ones come unlinked.
