There is an option to select an object, and then use it as a basis for the building grid (Shift-G). Very useful... but how do I cancel it and go back to the default grid? I tried slecting nothing and doing another Shift-G, it didn't work.

Easiest way - go to the drop down menu where it says reference and choose either world or local.

Next time you want an object as a grid set it up anew.

quickest way I found was just 'use selection for grid' on a nearby object which is aligned correctly. Bit of a faff i hear you say? not when youre building on a platform
