I haven't seen any discussion on this, so maybe the answer is blindingly obvious.
Perhaps I am asking the proto-question that has been asked so many times since the first Avs walked onto SL that it is permanently banned....
But, why oh why, when one's building, isn't there an UNDO command?

There is. It's in the edit menu, Edit -> Undo, or you can use the Windows shortcut, ctrl-Z. Undo is object specific, so if you want to undo the last few things you've done to any object, you have to have that object selected. Simply click on the object and press ctrl-Z.
Keep in mind, advanced functions like cutting, skewing, and top-sizing are not undoable. What you can undo is translate, rotate, and scale. (translate is graphics lingo for move)

i don't think undo works for texture changes either... at least it didn't used to

Undo does exist, but it's sort of like your cowardly friend who claims he'll back you in a fight but runs away at some of the worst times.
If you are trying to get something to undo and it won't you can try deselecting it and then selecting it again and attempting an undo. That usually works. usually...
Just out of curiousity, does anyone know the max undo level for SL?
