unfortunately, not the pudding kind, but one simple question:

I have land, editing the terrain allows me to move it up down and roughen it etc... but can I change the texture on it? I want to kill the grass and have a nice desert.

or will I have to cover it in a few flat prims to achieve that effect?

Only if you are the sim owner. Otherwise, you'll have to prim it.

Terrain can't be retextured on a per-parcel basis. It is controlled on a sim-wide basis, and even then the sim owner has quite a balancing job to carefully spread a grand total of 4 tiled textures over the island, in 4 altitude bands, that can be skewed at each corner of the sim.

As an individual parcel owner, all you can do is to cover the real terrain with fake terrain made of prims, and colored like terrain.
