On my new land I want to make a small river with sculpted prim water. Usually I make sculpties with a nurbs sphere, but I don't think this is the way to go for sculpted water. Should I use a cube or a plane? And what would the specs be for that primitive?

I'd guess plane would make the most sense... water is usually flat XD
You can't select that sculpty type from the edit menu, but when you've uploaded your texture, drop a script in it with the following:

llSetPrimitiveParams([PRIM_TYPE, PRIM_TYPE_SCULPT, "SculptMapUUID", PRIM_SCULPT_TYPE_PLANE]);
