I'm not sure what you mean by a 3 sided octagon.

Such as a bay window, with 3 sides. How to make the floor under it?

Three triangles. Or a rectangle tweaked to be smaller at one end.

Where's the octagon?

An octagon is an eight sided figure. A regular octagon is shaped like a stop sign.

The OP evidently means a regular trapezoid (or trapezium if you are British) ... a plane figure that has three of the external faces of an octagon and a larger, fourth face parallel to the middle one of the three. (Gee, this is like trying to describe a spiral staircase without using your hands. :) )

Perhaps when we're done with this, we could explore 8-sided triangles?

Anyway, to answer the question as asked:

Simply taper a cube, to turn it into a trapezoid. If it takes you three seconds, you did it slowly. Enjoy. :)
