I've seen it done before, but I tried linking 2 of my properties on opposite sides of a river using a bridge and it was returned because it was on 'protected' land. Is there a trick to this?

I would guess... make a large linkset, one for each side, such that the base prim is at one end of it. It shouldn't get returned (I'm guessing) if the base prim position isn't on the Linden land, despite the fact that you could have up to 30m of the linkset sticking out.
I've seen this kind of trick used to have prims apparently hanging out over the sim border.

Yep, make 2 halves with the root prims of each set fully on your land. Also make sure the water underneath is still navigable or you could get asked to take it down.
