I have a cube and I would like to add some text to this - is it possible to do this without having to create it as an image?

What do you mean "add some text?" If you mean "put words on the surface of the prim," then the answer is NO. Anything applied to the surface of a prim must be a texture, which someone has to create. Either you use someone else's texture or you make your own and upload it. If you mean "make words float over the prim," then the answer is YES. You do that with a hover text script which you put in the prim's Contents.
