Once an object has a flexible path associated with it, say wind and gravity, will it stay that way for ever? Meaning, Can I add something in the script, that will when touched, change the object to a non-phantom object, rigid, and perform actions from there and then once the action is complete go back to being a phantom object?
Just curious...

Just curious... Since no one else has answered... Sure. I think so. I haven't had a chance to play with flexi yet, but llSetPrimitiveParams( [PRIM_FLEXIBLE, FALSE, blah, blah, blah ] ); should turn it off and llSetPrimitiveParams( [PRIM_FLEXIBLE, TRUE, blah, blah, blah ] ); can be used to turn it back on. See the wiki entry for llSetPrimitiveParams for details.
