the only way I could figure would be to split it into 2 parts.. and the user will have to wear both items...

That's really a lot of prims just for a necklace. Rather than think about going above the link limit, which is impossible, or going around it by using multiple linksets, how about simply going under it? There are lots of tricks you can use to lower your prim count, from cutting, hollowing, & twisting existing prims, to clever texturing, to using sculpted prims. Modeling in SL is all about doing more with less. Without having seen your necklace, I'd be willing to bet you could probably cut the prim count by half or more just by using one or two of the techniques I just mentioned.

I ran into the limit earlier with a necklace. A few tips and tricks.
1) Step back from the crafting table and really *look* at the necklace from a distance and get a good idea of perspective. What looks like dazzling detail to someone who's been zoomed in on a jewelry table for 4 hours might be little more than a microscopic blur from 5 yards away. I made this amazing pendant with tiny seed pearls all around it- took me 46 prims for an effect that looked great, when zoomed in. Looked like a blur from 3-4 feet away though, much less 10.
2) Then I used a micro link and tried to make a long dangling thin chain necklace. No dice. I think I hit nearly 400 prims on that one. So I shortened the chain to a choker. Still 300. Finally I gave up and used a larger tube chain link and it zipped down immediately to 150prims... AND the chain was actually cleaner when rendered at the distance of someone looking at your avie. Chain links are horrible prim hogs. Consider longer links wider spaced.
Set up a jewelry table if you haven't. Mine has a black shelf for standard work, a white shelf for the rare necessity, a light running the full length, a shelf and two fun shapes to store each type of thing I use for crafting (pre cut tiny prims, finished links/pendants, & notecard programs for my linkrez), a sizer board, and a properly scaled back drop with a head picture on it. (I'll probably add a hand and wrist if I ever move on to rings/bracelets) It really helps keep that detail perspective if your regular work surface has scaled photos.
