Changing camera modes without getting up?

Is there a way to change between FollowCam camera modes without forcing the avatar to re-sit?

What I've tried so far hasn't worked, so I'd appreciate any help.

Actually, I know there is a way, I've got a motorcycle that does it... I just can't seem to get it to work myself...

Well, changes to llSetCameraAtOffset() and llSetCameraEyeOffset() won't affect an avatar that's already sitting on the object, until they unsit and then sit again. If you want to dynamically control their camera while they're sitting, you'll need to use llSetCameraParams(). Lightwave's suggestion of the followcam script on the wiki is definitely a good place to start. :)

Theres a good working model of this at my pier in fujin I've been setting up some camera positions myself. Mine is fully modable and its free just land on the pier in the middle of fujin
and touch the one you want.

Set up the old normal camera and set up a follow cam. To switch between the two simply set the follow cam active(?) flag to true or false. No unseat needed. You do need to unseat if you want to switch between static cam offsets.
