I'm just wondering if a sim crashes, when it comes back online, is the key retained?

such as if I put down an object, it is given a key. The sim crashes, is the key still the same when it comes back online?

Yes.

A sim restart does NOT count as a re-rez for in-world objects.

If you are ON the sim, you have to relog, which does mean a re-rez for any attachments.

but stuff on the ground (or in the air) persists with the same keys

There is the possability of a sim rollback (usualy no more then a half hour); which can result in lost assets. Always keep backups of important scripts in your inventory.
