AV death animation?

Can you have an animation play after your health hits 0 but before you teleport? What commands would I look into for this?

I'm pretty sure that the answer's no. TPing home on death is automatic, not scripted behaviour, and as far as I know there's no way to interrupt it.

Instead of using SL's healt stat, consider using a scripted health pack attachment, that records hits. When sufficient are taken, the health pack plays the "dead" or "down" animation on it's wearer. There's a number of the systems in SL, Cubey Terra's avTCS, Abranimations HUD health, are a few notable products that do this.

....and if you wanted you could then have that script, upon finishing the death anim deal 100% damage to you / teleport you home.

No.

If you write a weapon and health-pack system then your weapons won't do 'real' damage they'll talk to the health pack and do pseudo damage (or at least they shouldn't!).

That's all well and good (and better in fact) in a no damage sim, but in a damage enabled sim people 'shooting' 'real' bullets will still do damage to the main SL stat, and override the healthpack.

How about having an attachment, when your get *near* death, drop a low-prim TempOnRez PICTURE of you on the ground in a death pose?

I was thinking more like if you get shot from behind, you fall forwards and from front to back. Also if you get shot in the face or powerful enough you'll do a flip or explode into chunks or something other than just disappear.
But that's a good idea for leftovers :).
