Say I have a helmet on and I want to headbutt (teleport?) a griefer back to thier home. How can I make the helmet trigger the animation when I "attack"?

llStartAnimation() tie it to your attack trigger.

Though in SL parlance, 'sim' means a simulator that supports 65,536 sq/m of virtual land, whereas we use the word 'avatar' to represent the player's visible form in-world, and 'agent' to represent the operator's presence itself.
