In order to have a transition animation, do I have to load up a default standing pose, then animate him to the finished stance/pose.

What Im trying to do is switch into a fighting stance, and then I was going to add music to the background. So basically it would be a gesture.

Try to make Ease In and Out value longer when you create your animation. I don't think that you have to load up a default standing pose.

Right, like Seagel said you can just use Ease In and Ease Out to make a smooth transition between two animations. If you want to do anything special in between though you'll have to use a transition animation as you were suggesting. The easiest way would be to open up the first animation, select the last keyframe and copy the whole thing, then in your new animation, paste that into frame 2 (leaving frame 1 as the default stand). Then just make sure you do the same with the second animation, grab the keyframe at frame 2 and paste it to the end of the transition animation. Also, if you do this, you will most likely want to set Ease In/Out to zero, since you're already doing the transition manually.
