OK What's the secret to making my head stay still in my poses? The head bobbing all around is completly destroying a beautiful pose I worked all day on

Make sure the head and neck have keyframes even if they don't actually change position from the default pose.

Chip you can set key frames just to certain body parts? How? Gosh I'm going bonkers trying to figure all this stuff out. I so appreciate all your help thus far!!!

Yep  All you need to do is bring up the animation palette (window/animation palette). Select the square for the body part you want to add a key for in the appropriate frame (for a pose it would be the 2nd frame) and click the "+" button at the top. That will add a keyframe for that body part at that frame.
