Just a quick question about Blender. If I wanted to do an animation in Blender, will I need an actual person model, or can I do it with a "stick-man" model? Thanks!

The stickman model is all you need. That's what Poser uses too, they just wrap the sticks (called bones) in either blocks or smooth flesh to make visualization easier.
