I sold a couple of thousand Lindens back for dollars a week ago, and I received no form of transaction evidence on my paypal, and my bank account shows no sign of the money having gone through. What's happened?

Did you do the second step? It's one to sell and another to send it to PayPal. Oh, and then a third from PayPal to your bank, but that's off the SL site. Also, the 0-5 business days LL claims is often inaccurate.
Edit: You'll see something like the following on your account page; you need to click the 'Process Credit' link in order to cash out to PayPal or check.

Unless you tried to send the USD to PayPal they are still in your SL account.

step 1 sell lindens on lindex - money is deposited into your avatar's account in second life
step 2 move the lindens to your paypal from your avatars account by putting in a request and giving them your paypal email addy
if you want to get them to your bank account you have to then move them from paypal to your bank account. To skip this last step get a paypal debit card and just go to a bank machine that will accept interact.
