Does anyone know what the client menu recorder options are for?
I have tried the start/stop record/playback - but they just make me fly around in what seems like a random way.
The logging options are a mystery - what do they log and to where?
I know I probably will never need to use them. but i'm curious.

I believe it records keystrokes, which is why you seemed to fly around randomly. When you start recording, it logs your keystrokes until you stop...and when you play back...it replays those same keystrokes in that order.
I believe...I may be wrong.

From what I found out it records "waypoints", positions you go to and directionsyou turn. The best use for this might be an automated test of sensors or proximity scanners without having to walk around yourself repeatedly.

As Zi Ree mentioned, the "Record" section saves your in-world position (waypoint) once per second from the moment you start recording to the moment you stop it.
When you start playback, your avatar will go to the first saved waypoint (flying there if necessary), and then retrace your recorded positions from there on.
Only positions (and length of time at the position) are recorded. The direction your avatar is turning or facing is not saved. Keystrokes are also not saved.
The "Logging" section collects some in-world performance statistics for the duration indicated. It notes parameters such as the number of seconds the client was under 8 FPS, duration when packet loss was greater than 5%, etc. Periodically these statistics are automatically collected and sent to LL... the menu allows for manual collection.
Both the Record and Logging information are saved within your client's SecondLife.log file.
