It took me two days to find a plot, that was about 6 weeks ago.

there is not a specific time table. As suitable old plots (usually abandoned plots of the right size) become available they are put up. When Linden Labs feels there is enough call for it a new sim full of first land plots opens up.

When you are ready to buy just keep checking the Land sales in the search tab.

First Land comes. My advice is don't buy your first plot unless it is a first land. If you buy a non-first land.. then you won't be able to buy a first land.

Does First Land tend to get snapped up pretty quickly when it becomes available? Been looking for a few days and nada.

Yes it does. I looked just a couple days ago for someone that was relatively new to SL and was ready to take the plunge into land ownership. There were about 10 first land plots at that time.

Keep looking. :)

First land in new sims seems to go very quickly. I have seen whole sims go in a day or less. Plots that have been abandon in older sims and put back on the block as first land seem to not sell quite as fast. My advice to noobs is always buy first land, it's only L$512 and can be sold for a profit and as Double down said, once you buy Linden land you can never buy first land again. Unless your in a big rush, take your time and find a lot that you like. Even if you're going to turn around and resell it a nice plot on a hillside or on the edge of protected land is going to resell faster at a better price than that flat peice of land surrounded by other lots that look exactly the same.
