Edit->Preferences->Chat tab
5 boxes there you can pick new colours for chat.

Thanks for the info, but can you change the way it appears 'during' the chat. I sometimes see text in green or other colors sometimes. Is there something you can type at the beginning of your message that changes the color?

Green text is objects/scripts saying things. When a person/avatar says something it's in white text, when an object/script says something it's green text.
I also just want to point out that if I ever teleport somewhere and see "OMG UR LIk AWZUM!!!!1!!" I will burn my eyes out in protest.
