Check out the SL History Wiki. That's the best place to answer a question like this :)

You might try the Sims section of the SL History Wiki. For example, a quick look told me that my home sim, Mare, went online on October 2, 2004.

If the sim you're seeking information for isn't listed you might try finding a piece of Linden-owned road or Linden-owned land within it and checking the Claimed date in the General tab of the About Land window (as Linden-owned land is typically set aside upon the sim's creation).

From the History wiki:

"Stanford was part of the original Outlands along with the sims Federal, Hawthorne, Shipley, and part of Clyde (which had the "Outlands Wall" and acted as a warning sim). During Town Hall 4/18/03 it was announced that the former Outland sims were now mature, non-combat, and Jessie was the new combat sim. The reason for the change was because many residents moved into the Outland sims and did not want to participate in combat but rather simply live in peace. "

If you go into the Help --> about Second Life option you will see the number of the sim followed by agni.lindenlab... or something like that. Sims under 1000 are typically older from my understanding.

They have recycled the sim numbers, they really don't have any meaning anymore.
