It probably just wasn't loading! Sometimes when the asset servers get slowed down for whatever reason, textures just don't come in.. like in atoll when it looks like all the world is a seabed, ew!
Usually when this happens, you could attempt to boost your chance to get the nice grass back by logging out completely, shutting down your computer for 10-15 seconds and then coming back online. Helps clear out your disk cache and system resources so you'll get a faster loading time. Barring that, matter of patience, though feel free to report to an in-world Liaison that you are having difficulties seeing your sims's textures.
