You said all the folders are open, do you really mean every single folder in the entire inventory?
I'm noticing now that since I got a landmark, if I look at the recent items folder, it shows the landmark, which makes sense, but if I look at All Items, the landmark folder is open. It stays open after I close and reopen the inventory. If I then go the recent items tab and put something in the search field, then look at the All Items tab, the landmark folder is no longer open. It's kind of odd looking at three years worth of landmarks all in a row.

I'm getting this a lot too. I wouldn't say ALL folders, but maybe whatever I've opened the last 3 or 4 times I've gone into inventory...given that I'm organizationally hyper, that can be quite a few folders. I usually just choose 'Close All Folders' from the File menu so I can start fresh but, since I'd already closed them all before I exited my inventory in the first place, having to do it again is annoying. It'd also be nice if a) the vertical edit arrow on av attachments would should up more than a fourth of the time, and b) I could turn my av in Appearance using the directional arrows, like I used to be able to do. Now I can only turn her using the mouse and that tends to give a bit of an erratic effect.

Agreed, this is annoying and will be until this bug is fixed.
On a different thread I read of another work-around:
- Open a New Window view of your Inventory, then close your current view. The new "view" will have all the folders closed.
Of course this doesn't help for the situations, where you want to leave a folder expanded for when you return to inventory.
I recall seeing a response in the blog from a linden about this inventory bug, so I'm assuming it can be considered a known issue.

Any folder you've opened since you logged in is open whenever you open your inventory.
I filed a bug report via tools menu. [rt.lindenlab.com #574930]
