I've seen people appear to be able to send IMs to me when I'm in-world when they are clearly not logged into SL. Is this really possible and if so how?

If you have IM to Email enabled in your Preferences, then when someone sends you an IM when you are offline you will receive it in your email.
You can then reply to these emails and the person who sent the IM will receive the email reply as an IM in world.
