Would like to know if it is possible for conversations to be recorded and read back by Sim Owners. Also if there are scripts that can be inserted into objects to do this also.

Not looking to do it, want to know if my conversations with others have been private.

Yes, it can be done. Scripted objects with listens that do literally what they sound like--monitor chat. Which is strictly against the Community Standards if it's unconsensual:
Disclosure
Residents are entitled to a reasonable level of privacy with regard to their Second Lives. Sharing personal information about a fellow Resident --including gender, religion, age, marital status, race, sexual preference, and real-world location beyond what is provided by the Resident in the First Life page of their Resident profile is a violation of that Resident's privacy. Remotely monitoring conversations, posting conversation logs, or sharing conversation logs without consent are all prohibited in Second Life and on the Second Life Forums.
It's rare, but it happens, and when it does, HELP menu ---> REPORT ABUSE can be used, along with the blue object picker square to mark the remote monitoring device (often, they are sneaky little buggers like invisible cubes). Instant Messages can't be picked up like that tho.
