Can someone know what I'm doing in sl by snifing my trafic?

is the chat text and other data encrypted in anyway that would prevent someone from eaves-dropping my online activity inside SL?

The vast majority of the network messaging is unencrypted. An interloper between you and the SL servers could sniff the packets. Login, land purchases, and currency purchases are sent through an encrypted TCP connection.
