I know that land can be measured in various sq. meter sizes (512, 1024, etc.), but how would you determine the length and width of a fairly rectangular plot, in order to determine if a given pre-fab house would sit on it well?

Walk to one corner of your land. Write down the coordinates which you see on the bar at the top center of your screen. That always shows your location in the sim. Walk to the oppisite corner, and write down the coordinates you see there.
If the first number changed from 200 to 216 then your plot is 16 meters wide. If the second number changed from 128 to 192 then your plot is 64 meters long.
Keep in mind it's always a multiple of 4 meters in each direction -- if you calculate 15x31 then you have to figure it's actually 16x32 and you didn't stand exactly on the corner.
