Bad news, Willow - the answer is quite boring and mundane.
Meatloaf once said, in an interview, that he is always suprised at how many people ask him this question - primarily because he says exactly what he won't do in the song.
  1. I'll never forget the way you feel right now ...
  2. I'll never forgive myself if we don't go all the way tonight ...
  3. I'll never do it better than I do it with you ...
  4. I'll never stop dreaming of you every night of my life ...

He didn't seem to realise that his choice of words led everyone to believe that "that" referred to a single, un-mentioned thing - or possibly something that he should in fact do.

It should come as no surprise that wikipedia has an article on this :) in which they say

Although some people assume that "that" is an exophoric reference to a sex act, it is actually an anaphoric reference to the varying activities specified as antecedents in the lyric that the singer says he won't do.
which makes it all about as clear as the driven slush, IMHO.

The answer is pretty straightforward. Meat Loaf gives the answer at the end of the song, and it's presumed that the whole song is sung as a response to, "Hey, you gonna cheat on me and leave me?"

as Wikipedia notes, in the last 2 verses:

"In addition, the female vocalist identifies two other things that the lead singer denies he will do: You'll see that it's time to move on and You'll be screwing around. To both of these, the lead singer responds, I won't do that! No, I won't do that!"

...

It's kinda like Tracy Chapman 1996 hit, "Give me one reason" ... where she wastes 6 minutes of my life singing the same chorus over and over, til the very and of the song she reveals that she admitted her love for the person she's singing to, and presumably that the other person has not answered back. (With a reason, as in "I love you, too";).

Songs like this just are annoying.

I always thought that since the video for the song had a vampire theme it meant he'd do anything for love, but would never turn her into a vampire. ;)

And I still dream of the day when I can see Meatloaf, Korn & The Black Eyed Peas together for what I call "The Dinner Special Tour". Ok, now I'm being silly- lack of sleep.... 19 hours and counting.

Answered, but to put it more succinctly:

The female singer says that the male singer (i.e., Mr. Loaf) will tire of the relationship, move out of town, and forget about it all.

His reply is : "No, I won't do that."

In short, he'll do anything for love but give up love.
