Well, I always hate to ruin a good magic trick, but since you asked, here's the answer. It's simple. The answer to the math problem will always be a multiple of 9, and all multiples of nine share the same symbol in each chart. The same symbol is not necessarily repeated from run-through to run-through, but whatever symbol lands on the number 9 will be applied to all its multiples. Therefore, the program will always "guess" correctly what symbol you're staring at.

Further, which multiple you end up with is always a direct function of what digit is in the tens place in your original number. If you start in the teens, you always get 9. If you start in the twenties, you always get 18. 30's always give you 27. 40's give you 36. Etc.

10-(1+0) = 9
11-(1+1) = 9
12-(1+2) = 9
13-(1+3) = 9
14-(1+4) = 9
15-(1+5) = 9
16-(1+6) = 9
17-(1+7) = 9
18-(1+8) = 9
19-(1+9) = 9

20-(2+0) = 18
21-(2+1) = 18
22-(2+2) = 18
23-(2+3) = 18
24-(2+4) = 18
25-(2+5) = 18
26-(2+6) = 18
27-(2+7) = 18
28-(2+8) = 18
29-(2+9) = 18

30-(3+0) = 27
31-(3+1) = 27
32-(3+2) = 27
33-(3+3) = 27
34-(3+4) = 27
35-(3+5) = 27
36-(3+6) = 27
37-(3+7) = 27
38-(3+8) = 27
39-(3+9) = 27
