if you have like lets say, two HUGE moutains in the middle of your island ...would there be a way to get those modded so i could terraform the land better because these moutains are really hindering my options

Do you own the whole island sim? If so, I think you have many terraforming options.
If not, and it's just an island in a sim, then it depends on the age of the sim. Some of the oldest sims are highly terraformable, but most can go +- 4m.

Since gravity can be ignored in SL, how do the mountains get in your way?

Unfortunately you can't make tunnels in SL.
You can lower the ground and build above it, but you can't have open space, like a cave, in the center of a mountain.

in the orient, you'll only be able to lower land four meters below it's original height. you can also raise land four meters above it's original height but i think that you can only create up to forty-five degree angles in the land.

if you want to terraform more than that, you'll have to buy land in one of the original "core" sims or purchase a private estate. the former allows forty meter editing in both directions, that latter allows one-hundred. now that's a lot of terraforming woohoo!
