in the clothes templates V1.1 there is a layer called "UV_Map".
What is this exactly?
Is it the 3d of the avatars represented in 2d mapped on the shapes?

Yes, you got it exactly right. That's a 2d representation of the 3d model of the avatar body shape  . Zana

Since X, Y, and Z are used for positions in 3D space, positions in 2D space of textures are referred to as U and V, traditionally.
So any texture is a "UV map" but the ones used for clothing and skins are special in that they get wrapped around the lumpy avatar bodies, and not the more simple shapes of prims.
