I've seen a bunch of players that look like their actual model has been altered. Especially one I saw that looked like a cardboard cutout with an old-school Final Fantasy 1 character slapped on both sides.

However I can't seem to find any resources stating how you can actually alter the model of your character. Can anyone point me in the right direction?

The trick is, you can't. ^.^ I assume the avatar you saw was Lallander Pallaneu's (I think I misspelled that).

Avatars like that are done through a variety of tricks. In the case you're talking about, the trick is to wear an "invisiprim", which is a prim that's specially textured so that any avatars seen through it isn't rendered. Once the avatar's invisible, you attach items (which are not made invisible by the invisiprim) to create "a new avatar". This means (in this case) attaching flat prims, textured with your favourite characters, to your head, body, legs, whatever, and then they can move around according to your underlying avatar who still exists under the invisiprim!

There are other tricks used - special animations allow you to create 'tinies' and I know there's kits you can get to create giant avatars too. It's all about learning the tricks that have been developed to make what you want. ^.^
