I'm a photographer's assistant and have access to a photo studio
with lights and seamless and good digital photo equipment of all kinds.
I've got a friend who can probably make me a great skin.
What is the best way to shoot for this purpose?
Light myself, and then have someone move the tripod to various points to capture all
angles while i remain in one place?
Evenly light the set and stand on a rotating platform and just shoot it with the
camera in a stationary position?
Is there a method for this?

For a full body skin:

Shoot the photos with the subject on a rotating platform under good uniform lighting. You'll still need to move the camera for shots at different heights and angles, especially for hands and feet.

For a head shot only:

Shoot outdoors in direct natural lighting and have the subject turn in front of a fixed camera position on a tripod.

I'll do a full body skin, with nice diffused lighting from above.
We've got a big monopod camera stand, that goes up to about 15 feet
and has a retractible arm and all.

Nam's tips are spot on. You want to make sure you get all the angles you need. Front and back in davinci pose, closeups of hands and feet (both sides), side shots with the arm down, and raised, inside of the leg, head shots (front, profile, back of head, top of head, head tilted back to get underside of chin and nose). Those are the basics you'll want, plus closeups of anything else you want high detail on.
