When I rez a cube and turn it into a cake slice (ie triangular) and then using Shift Drag> Ctrl+Z and then increase the rotation by 60 the second piece is possitioned correctly. If I carry on using the first piece and increase by 120, 160 etc why do the other rotations alter, pushing the slices out of line on the horizontal?

Not sure why it behaves that way, which I have always found frustrating, but I can give you a fix. Create a base prim and position it as the center of the axis that you want to rotate the piece on. Link it to the cake piece. Duplicate and then rotate. The pair should rotate around the base prim. Unlink and delete the base prim. I've used this method for building "pie-slice" roofs for large round buildings.
